This salad is a like a cucumber dill salad on crack. Lol. The tomatoes, onions, mushrooms and olives take it to the next level. Then to top it off the dressing is a really simple and quick maple syrup and mustard dressing. The whole thing only takes minutes to prepare and as always you can substitute any of the ingredients.
Makes 2-3 Servings
Ingredients
2 medium cucumbers thinly sliced
2 tomatoes sliced
1/4 cup black olives
4 mushrooms thinly sliced
1/4 large red onion thinly sliced
4 tbs of fresh chopped dill
3 tbs of fresh parsley
Dressing
4 tbs cup of mustard
5 tbs Extra Virgin olive oil
1-1/2 tbs apple cider vinegar or whatever vinegar you have
4-1/2 tbs maple syrup or brown sugar
1 tsp of onion powder
2 tbs of water
Preparation
In a small bowl whisk mustard, oil, vinegar, maple syrup or brown sugar, onion powder and water.
In a large bowl add all salad ingredients. Next pour in salad dressing and toss well.
Cover bowl with plastic wrap and refrigerate for 15-20 minutes before serving.
