Lentils make a great, healthy, protein packed substitute for meat. This recipe is super delcious, easy and quick. It's gluten free and completely plant based. It would be perfect with pasta, or on a sub roll or better yet, as a pizza topping. Another great thing about this recipe is that it is a good way to use up any leftover rice and lentils you may have.
All you need is:
1 Cup of Cooked Lentils
1 Cup of Cooked Rice
1 Carrot Finely Grated (This is optional but it helps with the texture)
1 Garlic Clove Minced
4 Tbs of Brown Rice Flour
1 Tsp of Dry Oregano
1 Tsp of Basil Powder
1 Tsp of Onion Powder
1 Tbs of Nutritional Yeast
1/4 Tsp of Dry Ground Sage
Pinch of Red Pepper Flakes
1/4 Tsp of Salt
Oil for cooking
Preparation:
Combine all ingredients into a food processor and pulse for about 10-15 seconds or until all ingredients are broken down and combined. Next use a tablespoon to scoop out small amounts of the mixture and form small balls. *The smaller the balls the better. If you make them to large the texture may become mushy inside. Next heat a skillet over medium heat and enough oil to coat the bottom. Gently place the lentil balls into the skillet *Be careful not to over crowd the pan Cook the lentil balls for about 2-3 minutes on all sides. Thats it
