This simple asian geen bean and carrot salad is so delicious and easy to make. As always the you can add whatever vegetables you like. I just happened to have green beans and carrots in my fridge.
All you need is:
About 2 large handfuls of fresh green beans (remove the stems removed and cut in half)
3 Carrots peeled and sliced into 3 inch long sticks
1 Tsp of Black Sesame Seeds
1 Tsp of White Sesame Seeds
3 Tbs of Ponzu Sauce (or low sodium soy sauce as a substitute)
1/2 Tsp of Sesame Oil
1/2 Tsp of Fresh Ginger *I always store my ginger in the freezer and grate it as needed. It helps prevent having large chunks of ginger.
Salt and Pepper to taste
Preparation:
First blanch your green beans by bringing a large pot of water to a boil. Next add in 2 teaspoons of salt and your green beans. Boil for about 2-3 minutes and immediately remove and place into a bowl of icy cold water. *This process will slightly cook the green beans and take away any bitterness without making them mushy. Next drain and add into a large bowl. Add in carrots and toss with the ponzu sauce, ginger, sesame oil and sesame seeds. Add salt and pepper to taste if neccessary. Thats it.
Remember that you can always add more or less of any of the ingredients depending on your taste.
