Asian Noodle Soup

I love when I have a taste for something very specific and I miraculously have every ingredient needed. I love asian soup and I have been craving it for a while so I was super excited to put this together. The recipe is super easy and full of flavor. The possibilities are endless with this soup. You can always add or substitute the ingredients for your own personal taste.

The broth was definitely the star of this soup. It was very simple to make and the results were well worth it. The great thing is that I use the same ingredients for the broth and the actual soup.

For the Broth you will need:

4 Cups of Water

About 4 Green Onions and Chives

1 Handful of Shiitake Mushrooms

1 Chunk of Ginger (about 2 inches)

3 Cloves of Garlic

4 Tbs of Soy Sauce

A few Cilantro leaves

About 3-4 Bok Choy ends (I just chopped of the ends of the bok choy I was using for the soup)

Siracha to Taste (Optional, but I absolutely loved the kick)

Salt to Taste.

Asian Noodle Soup

Just simply combine these ingredients into a medium sized pot and simmer for 30-45 and add siracha, salt and pepper to taste. Then use a sloted spoon to remove the ingredients from the pot. I reserved the the garlic, ginger and mushrooms and sliced them and added them back into the broth for my soup.

Now for the actual soup ingredients. I Pretty much used the same ingredients that I used for the broth except I added a few other things

For the Soup All you need is:

1 Cup of Shiitake and or Oyster Mushrooms (I love mushrooms so I used both)

About 3-4 small bunches of Baby Bok Choy (You could totally substitute the Bok Choy for and Leafy green you like)

1 Small Handful of Rice Noodles (You can use more or less)

1 Carrot Peeled and Thinly Sliced

1-2 Tbs of Chives

1-2 Tbs of Green Onion

2 Tbs Cilantro (I love Cilantro but you can reduce the amout if you like.

1 Slice of Lime

Asian Noodle Soup

To Prepare just bring the broth up to a simmer and add rice noodles and cook for about 3-4 minutes then add in mushrooms, carrots, bok choy, chives, and green onion. Cover and let simmer for about 4-5 minutes. Add and additional salt to taste. Then pour your desired amount of soup into a bowl and squeeze a little lime juice into your soup and stir in the cilantro before serving. * I love siracha so I drizzled some in mine before eating it and it was AMAZING.
