Clearly I am a huge fan of the Potato and Leek combo, so here is another super easy and flavorful recipe.
All you need is:
4 Potatoes * I used russet (Peeled sliced and boiled until fork tender)
1 Leek Cleaned and Chopped
3 Cloves of Garlic minced
Salt & Pepper to Taste
1/4 Cup of Flour
Pour an additional 1/4 cup of flour on a large plate for coating your pancakes
4 Tbs of Extra Virgin Olive Oil *plus more for cooking
Preparation:
After you have boiled your potatoes drain them and set them aside. Next place a large skillet over medium heat and add oil. Add in leeks and garlic and cook for about 4-5 minutes until tender and transulcent. Next combine the potatoes, leeks and garlic into a food processor and pulse until potatoes are broken down (you can also use a hand masher) *Do not over process the potatoes should still have lumps you want the mixture to be stiff. Then stir in flour and add in salt and pepper to taste. Using floured hands form pancakes and lightly press into flour so that each pancake is coated with flour. Then bring a large skillet over medium heat and add in just enough oil to coat the bottom of the pan. Cook each pancake for 2-3 minutes on each side or until the turn golden brown. That's it!
