This dish is full of fresh veggies and it has the perfect blend of heat and sweet. It's super easy to make. As usual you can use whatever veggies you have on hand.
Cook Time: 25 Minutes
Serves: 2-3
All you need is:
2 Carrots Peeled Thinly Sliced
1/2 a Green Pepper Thinly Sliced
1/2 a Red Pepper Thinly Sliced
1 Handful of Green Beans Blanched
(Simply put your green beans in a large pot of salted boiling water and cook for 4-5 minutes then drain and rinse under cold water. This will allow them to retain their texture and color without being too tough.)
1 Handful of Broccoli Florets
1 Handful of Mushrooms Sliced
1/4 of an Onion Sliced
1 Garlic Clove Minced
Pinch of Red Pepper Flakes *Use as much and as little as you like
Salt & Pepper to taste
4 Tbs of Oil
1/2 Tbs of Sesame Seed
The Sauce
6 Tbs of Soy Sauce
4 Tbs of Maple Syrup * You can substitute with brown sugar
1/2 Tsp of Freshly Grated Ginger *You can use as much and as little as you like
Preparation:
First make the sauce by mixing the soy sauce, maple syrup or brown sugar and grated ginger in a small bowl and set aside.
Place a large skillet or wok over medium high-heat and add in oil and onions, garlic, carrots, mushrooms, red & green peppers, broccoli and green beans. Cook for 6-7 minutes. Next stir in the sauce and cook for an additional 2-3 minutes. Then toss in the sesame seeds and your desired amount of red pepper flakes. Lastly, add salt and pepper to taste.
You can serve this over rice or eat alone.
