I love making wraps in the summer time. You can add practically anything in them and they are super filling. Best of all they only take minutes to make. These wraps feature chickpeas, sun dried tomatoes, hummus, veggies and just a touch of balsamic vinegar which makes them explode with flavor.
All you need is:
1 head or romaine lettuce hearts chopped
1 cucumber thinly sliced into 3 inch pieces
1 handful of chopped tomatoes, any kind will do
1 container of sliced or diced sun dried tomatoes with oil
1 can of chickpeas rinsed and drained
1 large handful of fresh basil finely chopped
1/4 a red onion thinly sliced
1 container of hummus, use your favorite brand
1 lemon
3-4 whole grain wraps, or use whatever you prefer
a drizzle of balsamic vinegar for each wrap
sea salt and pepper
Preparation:
First drain and rinse the chickpeas and place them into a large bowl and add as much of the sun dried tomatoes and oil as you like. Next squeeze in about a teaspoon of fresh lemon juice and add salt and pepper to taste.Now spread as much hummus as you like onto one side of each wrap. Finally, layer on the remaining ingredients and drizzle on a small amount of balsamic vinegar and roll up your wraps. That's it.
You can even make an amazing salad if you have any leftovers
