Fall is quickly approaching and this dish is a perfect introduction into the season. This recipe only contains a handfull of ingredients. Thankfully so many grocery stores are providing pre-peeled Butternut Squash so preparation is now a breeze when it comes to cooking.
Makes 1-2 Servings
Ready in: 25 minutes
All you need is:
1/2 of a butternut squash peeled and diced into 1/2 inch cubes
1/2 a red onion sliced
1 large bunch of dino kale chopped
1/4 a cup of balsamic vinegar
Optional - 1/2 tsp of fresh sage finely chopped
3 tbs of extravirgin olive oil
salt and pepper to taste
Preparation:
First place a large skillet over medioum heat and add in the oil, onions and butternut squash and cook for 10-15 minutes or until the squash starts to become tender while stirring occasionally.
Next carefully pour in the balsamic vinegar and raise to medium-high heat.
Add in the kale and sage and cover with a lid for about 4-5 minutes. *The steam will wilt the kale.
Remove from heat and stir. Then add salt and pepper to taste.
