I've wanted to make a Hearts of Palm dish for a very long time and this was well worth the wait. This recipe is super simple, easy to prepare and budget friendly costing only around $7. Most importantly, it is absolutely full of amazing flavors.
Cook time: 25 Minutes
Makes: 2 Servings
Ingredients
1 jar of hearts of palm - drain and slice them into 1 inch pieces. Use a paper or kitchen towel to pat them dry. *You must pat them dry to prevent sticking while cooking.
1/2 a leek chopped cleaned, rinsed and drained
1 bunch of kale chopped
3 tbs of fresh dill chopped
1 garlic clove minced
4 tbs of extra virgin olive oil for cooking
Fresh lemon juice
Salt and Pepper to taste
Instructions:
First place a large skillet over medium heat and add in 2 tbs of oil.
Next and in the leeks and cook for about 5 minutes.
Then add in the kale and cover with a lid to allow the kale to wilt and steam for 3-4 minutes.
Add salt and pepper to taste and remove from the pan.
Now raise the pan to medium high heat and add in 1 tbs of extra virgin olive oil, garlic and the hearts of palm.
Let the hearts of palm cook for 2-3 minutes before flipping.
Next add in the fresh dill and a squeeze of fresh lemon juice.
Add salt and pepper to taste and serve with the kale.
