I recently made this dish for my mother and posted it to my Instagram and everyone wanted the recipe. It's a super simple and delicious recipe that anyone can enjoy. It features tons of veggies like zucchini, red peppers and kale.
Cook Time: 25-35 Minutes
Makes 2-3 Servings
All you need is:
About 1/2 a box of bow tie pasta cooked according to the box instructions
1 red bell pepper chopped
1 zucchini sliced
1 bunch of dino kale or whatever kale you can find
1/4 cup of extra virgin olive oil
2 garlic cloves thinly sliced
1-2 cups of marinara sauce *add more or less depending on your preference.
1/2 a lemon
salt & pepper to taste
pinch of red pepper flakes
1 tbs of nutritional yeast *optional
1/2 tsp of dry oregano
Preparation:
First place a large skillet over low heat and add in the oil and garlic. Let the oil and garlic warm together for about 5 minutes.
Next remove the garlic and set aside. *You will add them later.
Now add the red pepper, zucchini and kale to the oil and raise the heat to medium. Cook for 7-8 minutes.
Then squeeze on a little lemon juice and add the garlic.
Finally add in the pasta, marinara sauce, red pepper flakes and oregano. Add any additional salt and pepper to taste.
