So I am working on a project that features really easy, clean, healthy recipes. I really wanted to preview one of the dishes.....Here is one of the recipes that will be featured......Stuffed avocados, filled with a fresh salsa topped with a homemade ranch dressing and a sun dried tomato walnut meat.
All you need is:
2 avocados *Sliced in half with the seed removed
The Salsa
2 cups of diced tomatoes
1/2 yellow bell pepper diced
1/2 red bell pepper diced
1 cucumber diced
1/4 cup of red onion diced
1 jalepeno finely diced * optional
2 tbs of fresh cilantro diced
drizzle of olive oil
juice of 1 lime
Sea salt & pepper to taste
Walnut Meat
1/2 cup of walnuts soaked. I like to saok mine for at least 3 hours to help get rid of the bitterness.
1/2 cup of sundried tomatoes *in or out of oil is fine, you can even include some of the oil.
1 tsp of chili powder
1/4 tsp of cumin
1 tbs of coconut aminos or soy sauce
Salt to taste
Ranch dressing
1 cup of soaked cashews drained and rinsed. * soak for about an hour unless you are using a high power blender like a vitamix.
about 1/2 cup of water
3 tbs of nutritional yeast
1 tbs of onion powder
1 tsp of garlic powder
juice of 1 lemon
juice of 2 limes
1/2 a cup of water
3 tbs of fresh chives chopped
1 tbs of fresh parsley
salt and pepper to taste
Preparation
First add the ingredients for the walnut meat to a food processor and blend until it resembles ground meat. Add salt and pepper to taste and set aside.
Next make the ranch dressing by combining all of the ingredients into a blender or food processor EXCEPT the chives and parsley. Process until the mixture has a smooth consistency. Next stir in the chives and parsley. Add salt and pepper to taste.
Now make the salsa by adding all the ingredients into a large bowl and mix well. Drizzle with extra virgin olive oil and add in the lime juice. Add salt and pepper to taste.
Finally assemble the avocados by slicing them in half and removing the seeds. Drizzle a little lemon juice on each one to prevent them from browning. I also like to use a spoon to scoop out just a little of the avocado to make room for all of the filling. You can always add what you scoop out to the salsa mixture. I personally just eat it. LOL Then use the spoon to gently loosen each avocado from the skin. Do not remove them. I do this to make eating them easier. Now simply pile on the walnut meat and salsa and drizzle on the ranch dressing.
