Warm Kale Chickpea Sun Dried Tomato Salad


Life can get super busy and hectic sometimes and it's always good to have a delicious and nutritious meal. Warm Kale Chickpea & Sun Dried Tomato Salad has definitely become ma go to meal in my diet. It is absolutely delicious and made with ingredients that you probably already have on hand.

Cook Time: 15 Minutes

Makes 2 Servings or if you're like me 1

All you need is:

1 can of chickpeas drained and rinsed

1/4 a red onion slice about a quarter inch thick

1 bunch of kale chopped

1 jar of sun dried tomatoes - I like to use the juilienned ones in oil. I also add a few tbs of the oil to the salad

1 small handful of fresh basil chopped

3 tbs of extra virgin olive oil

salt & pepper to taste

1/2 a lemon

1 tbs of nutritional yeast - optional

Preparation:

First start by placing a large skillet over medium heat and add in the extra virgin olive oil. Then add in the onions. Allow the onions to cook for 3-4 minutes then add in the kale. Cook the kale for 3-4 minutes.

Next stir in the chickpeas, sun dried tomatoes, basil and nutritional yeast. Then add the oil from the sun dried tomatoes, a squeeze of fresh lemon juice and add salt and pepper to taste.
