I love making this black bean soup. It's so easy to make and it's full of flavor. The best thing is that you probably already have all the ingredients you need already.
Cook Time: 30 Minutes
Makes 2-4 servings
The Ingredients
2 cans of black beans drained
2 garlic cloves minced
1 green bell pepper diced
1 cup of diced onion
1/2 tsp of chipotle pepper powder
pinch of cumin
3 tbs of extra virgin olive oil
2 cups of water or veggie stock
salt & pepper to taste
2 limes
The cashew cream
1 cup of cashews soaked
1 cup of water
2 tbs of nutritional yeast
1/2 tsp of onion powder
1 tsp of garlic powder
Juice of 1 lemon
Salt and pepper taste
Directions
First make the cashew cream by adding all the ingredients to a blender and blend until smooth and set aside
Place a medium size pot over medium heat and add in the oil, onions, peppers and garlic. Cook for 6-7 minutes then add in the black beans, water or stock and seasonings! Stir and cover with a lid.
Reduce heat to medium low heat and let simmer for about 20 minutes.
Add salt and pepper to taste.
Serve with cashew cream, sliced avocado, fresh Pico de Gallo and your desired amount of fresh squeezed lime juice.
