This kale salad is my go to recipe at least 3 times a week. I always seem to have all the ingredients on hand and I never get tired of eating it. It’s full of cucumbers, black beans, herbs and sundried tomatoes. It’s light but satisfying and it only takes about 5 minutes to put it all together. You can prepare it ahead of time and pack it for lunch for the following day and it holds up perfectly.

Makes 2-3 Servings
The Ingredients
1 bunch of kale cleaned and chopped
2 cups of cooked black beans or whatever bean you prefer
1 large cucumbers sliced
1 cup of sun dried tomatoes (I use the ones in oil and reserve it for dressing the salad
1 small handful of chopped dill
1 lemon
2 tbs of nutritional yeast (you can use more or less depending on your taste)
2 tbs of extra virgin olive oil
sea salt to taste
Directions
Simply add the kale into a large bowl and drizzle on about 1 tbs of extra virgin olive oil, the juice of half a lemon, half of the nutritional yeast and salt and gently massage the kale for about 1 minute. (If you’ve ever had a kales salad that was terribly tough and bitter to taste it was probably because they skipped the massage. Massaging your kale will help tenderize the kale and make it nice and yummy.)
Now Add in the remaining ingredients and mix well…..That’s it
