I love making this recipe. It has the perfect combination of sweet and heat. Plus it only takes moments to make and you probably already have everything you need on hand. I love making this dish with kale but I know that just about any leafy green vegetable will do.I also add oyster mushrooms because they have a nice meaty like texture but you can pretty much use any mushroom you want or even omit them from the recipe.
Cook Time: 20 minutes
Makes 2-3 servings
Ingredients
1 can of chickpeas rinsed, drained and pat dry
1 bunch of kale chopped
2 cups of oyster mushrooms chopped
2-3 tbs of extra virgin olive oil
2-4 tbs of maple syrup
1 tsp of onion powder
1 tsp of garlic powder
1/4 tsp of cayenne pepper (use more or less depending your preference)
sea salt to taste
Directions
Place a large skillet over medium high hear and add in the extra virgin olive oil and chickpeas and mushrooms. Cook for 6-7 minutes stirring occasionally. Next add in the maple syrup, garlic powder, onion powder and cayenne pepper and cook for about 2-3 minutes. Now, add in the kale and cook for an additional 6-7 minutes until everything is nice and caramelized. Add sea salt to taste. Thats it.
