So the other day I was making my daily trip to the grocery store and the idea for this recipe popped into my mind. Spicy sriracha chickpea lettuce wraps topped with cucumbers tossed in ranch dressing. Perfectly spicy, fresh and crunchy. I made these and let's just say they're my new obsession. In fact, I smashed each and everyone of them in less then 5 minutes #NOSHAME. They're incredibly easy to make and they taste phenomenal. I also must mention that they're incredibly budget friendly and you probably already have all the ingredients.

Makes 4 Servings
Ingredients
1 can of chickpeas rinsed and drained
1 garlic clove minced
2 tbs of fresh parsley chopped
3-4 tbs of sriracha hot sauce plus mor for drizzling *use more or less depending your taste
2-3 tbs of extra virgin olive oil
pinch of sea salt
4 medium sized romaine leaves
1 medium cucumber diced
The ranch dressing
1 cup of cashews soaked, drained and rinsed
2 tbs of lemon juice
1 tsp of garlic powder
1 tsp of onion powder
1 tsp of sea salt *I always use pink Himalayan
2 tbs of fresh parsley chopped
2 tbs of fresh chives chopped
2 tbs of nutritional yeast
3/4 cups of water
Preparation:
First make the ranch dressing by adding the cashews, water, lemon juice salt, onion and garlic powder to a blender and blend until smooth. Pour into a small bowl and stir in the fresh herbs. Now pour your desired amount onto your diced cucumbers and mix well. Place the bowl into the refrigerator until serving time.
Now make the spicy sriracha chickpeas by placing a large skillet over medium heat and add in the oil. Once the oil is hot carefully add in the chickpeas. Cook for about 5 minutes stirring occasionally. Now, carefully add in the garlic and sriracha sauce (make sure you take a few steps back from the pan or use a splash guard or you may get assaulted with hot pellets of sriracha, but it's totally worth it). Cook while stirring occasionally for an additional 4-5 minutes. Remove from heat and add in the fresh parsley.
Now it's time to assemble your lettuce wraps. Just pile on the chickpeas and ranchy cucumbers. Drizzle with extra sriracha sauce and enjoy.
