I'm one of those people that really has to be in the mood for butternut squash. Especially since it has such a distinct flavor. My local grocery store always has it in abundance and I thought it would be a challenge to create a dish that didn't taste like your typical squash dish and this is what I came up with.....Smokey Roasted Butternut Squash. The combination of the smokey dry rub seasonings and the sweetness from the squash is a match made in heaven.
Cook Time 20 Minutes
Ingredients:
1 Butternut Squash peeled, with the seeds removed and cut into 1/2 inch thick strips
2 tsp of chili powder
1/2 tsp of paprika powder
1/2 tsp of ground cumin
1 tsp of onion powder
1/2 tsp og garlic powder
2 tbs of extra virgin olive oil
1/2 tsp of sea salt to taste
2 tbs of fresh parsley chopped
Preparation: Preheat oven to 400*
In a large bowl combine the squash and extra virgin olive oil. Mix until all of the squash is coated with the oil. Next, add in the seasonings and toss until evenly coated. Place the squash on a large sheet pan in an even layer. Roast in the oven for about 10 minutes on each side or until tender. Remove from the oven and sprinkle on the fresh parsley and add additional sea salt to taste.
