I posted this on Instagram the other day and got tons of request for the chili cilantro lime squash recipe so I decided to add it here on my blog. The other items are my recipe for my cold black rice sesame ginger noodles (see my previous recipe post here ) avocado with cayenne pepper and lime juice and fresh Boston lettuce.
Ingredients for the chili lime squash
1 butternut squash chopped in about 1-1/2 inch pieces
2 tsps of chili powder
1/4 tsp of cayenne pepper (use more or less depending on your taste. I like it HOT)
2 tbs of extra virgin olive oil
3 tbs of chopped cilantro
About 1 tbs of fresh lime juice
sea salt to taste
Preparation:
Preheat oven to 400*
Place the butternut squash into a large bowl and coat with the extra virgin olive oil. Then add in the chili powder and cayenne pepper. Place the squash onto a large sheet pan in an even layer. Place on the middle oven rack and cook for 10 minutes on each side until tender and golden brown. Remove from the oven and squeeze on the fresh lime juice and add salt to taste.
