Kale Veggie Wraps

My life has been incredibly hectic lately and this quick veggie wrap has been my go to meal. It super simple and easy to make. In fact you probably have all the ingredients you need on hand.

 

Prep Time 10 minutes


Ingredients:

  • 4 cups of kale chopped

  • 1/2 a cucumber sliced thin lengthwise

  • 1/2 an avocado sliced

  • 1/4 cup of sun dried tomatoes

  • your favorite hummus

  • sliced red onion

  • 1 tsp of extra virgin olive oil

  • 1 lemon

  • Flour wraps or lavash bread

  • sea salt and cayenne pepper to taste




Preparation:


First add the kale into a medium size bowl and squeeze in some fresh lemon juice.

Add in the extra virgin olive oil and gently massage the kale for 1 minute until it becomes nice and tender.

Now add in the cayenne pepper and sea salt to taste.

You can now begin assembling you wraps.

First you will need to spread on your desired amount of hummus. T

hen just add on your desired amount of kale and veggies.

Now just wrap that baby up.
