So my sister and I are obsessed with shopping for food in TJ Maxx and not for clothes or anything like that but for food. Yes....I said food. If you didn't know it already both TJ Maxx & Marshall's both have incredible specialty food sections that have things like infusion olive oils, black salt, imported olives and black rice noodles. The great things is that these things are always very reasonably priced and organic. So imagine my delight when I came across these beautiful black rice Pad Thai noodles that cost only $3.99. I instantly new what I wanted to make with them. I've been craving cold dishes lately (which happens to me every summer before I gear up for a primarily raw vegan diet) so this dish was a no brainer. Simple fresh ingredients and minimal time in the kitchen.
Cook Time 25 Minutes
Makes 2-3 servings
Ingredients:
1 8 oz. package of black rice noodles (any pasta will do if you can't find these) cooked and rinsed under cold water for about 3 minutes then drained.
1/2 a red bell pepper chopped
1/2 yellow bell pepper chopped
1 cucumber chopped
1/2 cup of green onions chopped
2-3 tbs of fresh cilantro chopped
1-1/2 tsp of fresh minced ginger
1 garlic clove minced
4 tbs of oil ( I used grape seed oil)
2 tsp of sesame seed oil
2 tsp of soy sauce or coconut aminos
3-1/2 tbs of fresh lime juice
4 tsp of maple syrup
2 tsp of sesame seeds
salt to taste
Preparation:
First mix together the dressing by combining the grape seed oil, sesame seed oil, ginger, garlic, lime juice, soy sauce or coconut amino's and maple syrup into a medium bowl and mix well. Next add the peppers, cucumbers and noodles into a large bowl and pour in the dressing and mix well. Then add in the green onions, cilantro and sesame seeds and sea salt to taste and mix well. That's it!!
