If you are a long time Let's Be Vegan follower I'm sure you already know that I am a huge fan of tacos. Now that the fall is approaching I wanted to create something a little more comforting and warm than a regular taco. I instantly thought of making a vegan version of chicken tortilla soup. So I jumped in an uber and went straight to Trader Joe's and grabbed two cans of jackfruit to use as a chicken substitute along with some frozen roasted sweet corn, canned green chillies, black beans, roasted tomatoes and veggie stock. The rest is history.
Cook time: 45 minutes
Ingredients:
2 cans of jackfruit in water (Make sure you drain it well and squeeze out the excess water)
1 sweet onion chopped
1 leek chopped
3 garlic cloves minced
1 can of black beans rinsed and strained
2 cups of sweet corn (I used frozen)
1 can of fire roasted tomatoes
1 small can of green chilies
1/4 cup of tomato paste
3 tsps of chili powder
1/2 tsp of chipotle powder
1/2 tsp of paprika
pinch of cumin
1/3 tsp of dried oregano
1/4 cup of extra virgin olive oil
6 cups of veggie stock
salt and pepper to taste
Tortilla chips
Preparation:
Place a large pot over medium heat and add int the oil, onions, leeks, and garlic. Cook for about 4 minutes then add the jackfruit, green chillies and fire roasted tomatoes. Cook for and additional 4-5 minutes while stirring occasionally. Now stir in the seasonings and tomato paste. Stir until well combined. Next carefully pour in the veggie stock, black beans and corn and stir well. Reduce heat to a simmer (medium low heat). Cover with a lid and let cook for 20-25 minutes making sure to stir every 4-5 minutes or so. Remove from heat and add in the green onion and add salt and pepper to taste. Serve with tortilla chips.

Another great option is to add all the ingredients into a crockpot or slow cooker for about 45 minutes. I love the canned Trader Joe's jackfruit in brine. The brine is very mild and works great in most recipes that call for jackfruit. However in my opinion most brands of jackfruit in brine are too briney (not sure if thats a word but you know what I mean). So if you can't get to TJ's try looking for Jackfruit canned in water. I always find it in most Asian Markers like Hmart.
