Recently went on a vegan seafood binge, recreating vegan plant based versions of some of my favorite classic recipes. I'm talking plant base versions of fish n chips, scallops, calamari and these yummy vegan crab rolls. I've posted this recipe before but decided to post a newer version along with a series of vegan seafood recipes. You will need a food processor for this recipe. This recipes is a summer time staple in my home for so many reasons. It's super cheap, easy to make and it tastes amazing. It's made using hearts of palm. If you've never tried hearts of palm before you can find them in glass jars or cans in your grocery aisle close to olives and artichokes. They usually cost $2-3 a jar. When you drain them and break them down for some crazy reason it resembles lump crab meat or lobster. I'm like "Thank you father God for this vegan food gift!"
Takes about 15 Minutes to prepare
Ingredients:
2 jars or cans of hearts of palm rinsed and drained
1/2 tsp of kelp flakes
3/4 tsp of Old Bay Seasoning
2 tbs of fresh dill chopped
1/3 cup of vegan mayo
sea salt to taste
A squeeze of fresh lemon
1 tsp of fresh chives
a dash off paprika for color and garnish
4 vegan pretzel rolls or the rolls of your choice
Preparation:
First rinse and strain your hearts of palm
place them into your food processor and pulse for about 5-10 seconds or until it resembles lump crab meat.
Remove the hearts of palm and place into a medium size bowl.
Add in the remaining ingredients and mix until everything is combined.
Add sea salt to taste
Sprinkle on a dash of paprika for color
Now you can assemble your rolls.
