I love lentils. They have such a hearty filling flavor and texture that makes me feel all warm and cozy inside. For this recipe I used the Trader Joe's steamed lentils which are absolutely delicious. They have so much flavor that it doesn't take much to make them delicious. I like preparing the lentils separately because the can over cook and become mushy.
Ingredients
4 cups of cooked lentils (Cook 2 cups of uncooked lentils by bringing 4 cups of veggie stock to a simmer.. Add in 1 tbs of extra virgin oil and a pinch of salt. Carefully add in the lentils. Reduce the heat to medium low and cover with a liid for 10 minutes. Once the liquid has been absorbed remove from heat and set aside.
1 bag of baby spinach
1 cup of veggie stock
1/2 tsp of garlic powder
2-3 tbs of extra virgin olive oil
1/2 tsp of onion powder
salt and pepper to taste
Preparation:
Add 2-3 tbs of extra virgin olive oil to a large skillet and place over medium heat.
Add in the oil and immediately add in the spinach and garlic powder and stir until wilted.
Carefully pour in the 2 cups of veggie broth, onion powder and cooked lentils.
Reduce the heat to low and simmer for about 5 minutes.
Add salt to taste and drizzle with extra virgin olive oil before serving.
