Tender green beans with shallots, garlic and hearty potatoes sounds like a winning combination to me. I love super easy and delicious recipes like this one. You literally just throw all the ingredients onto a sheet pan and let the oven do all the work.
I love this recipe so much simply because it's so easy to make and it's the a great combination of flavors and texture. The green beans come out perfectly tender and the potatoes are super soft and mushy on the inside and the shallots tastes so tender and fragrant.
Cooking Tips:
Using baby potatoes makes this dish super easy and because of their small size they cook perfectly in no time. If you don't have baby potatoes you can always use Russet or Yukon Gold potatoes and boil them or steam them before using them in this recipe.
Whenever I roast food I like to use a large commercial size sheet pan so that I can avoid overcrowding the pan and cook things in one round. You can find large sheet pans on amazon
