Why make a regular grilled cheese when you can make a spinach and artichoke grilled cheese?
At this point I think I can be a full time vegan representative of Trader Joe's. Sometimes I find myself making meals with items that are almost completely from Tj's. I got almost all the items for this recipe there with the exception of the vegan cheese, vegan mayo and bread which I got from Whole Foods.
Here are some of the items that I used for this recipe:
I love the Trader Joe's quartered marinated artichokes. These have a great balance of vinegar and oil. They are so well seasoned that I didn't need to add any additional seasonings while cooking. I also love using marinated artichokes in dishes because they are super tender and full of flavor.
This stuff right here is a complete game changer for me.
Just toss in the artichokes and cook for a few minutes until they are nice and warm. Then add in the fresh spinach.
Once the spinach and artichokes are done you can begin assembling your sandwiches.
I always use olive oil to toast my bread because it gives the best golden crispy crust.
