The Best Green Beans I've Ever Had

I love green beans. They were one of my favorite things to eat as a child and I wanted a more adult way to make them and this ended up being a hit.

 

Ingredients

  • 2 pounds of fresh green beans with the stems removed

  • 1 leek cleaned and diced

  • 1 red bell pepper

  • 4 medium size garlic cloves minced

  • salt to taste

  • 4 tbs of extra virgin olive oil

  • 4 tbs of vegan butter

Preparation

  1. You will need to blanch the green beans which is a process where you boil them for a few minutes so that they become tender. Then immediately submerge them in icy cold water to stop the cooking process an help them retain their pretty green color and prevents them from getting too soft.

  2. First fill a large pot with water and bring it to a boil.

  3. Add in 2 tbs of salt and the green beens.

  4. Cook the green beans for 4-5 minutes.

  5. Remove the green beens and immediately rImmediately submerge them in icy water for a few minutes. Then strain them and set aside.

  6. Now place a large skillet over medium heat and add in the oil and butter.

  7. Stir in the leeks, red pepper and garlic cloves.

  8. Cook while stirring for 4-5 minutes.

  9. Then add in the green beens and cook for an additional 5-6 minutes making sure to mix everything well.

  10. Add salt to taste and enjoy!
