This is one of those simple easy recipes that still impresses everyone that eats it. Roasting is an easy fool proof way to get the best flavor out of food and when you roast use them Za'atar seasoning they're even better. Za'atar which is a seasoning used all over the Mediterranean. It's filled with tons of herbs and sumac which has a bright citrus flavor. You can find a link to the brands that I use below. Ingredients
1 medium size eggplant cut into 2 inch pieces
1 zucchini chopped into 2 inch size pieces
1 red pepper roughly chopped
1/2 red onion chopped
2 tbs of melted vegan butter
2 tbs of extra virgin olive oil
2 tbs of Za'atar seasoning
salt to taste
Preparation
Preheat oven to 400*
Place the veggies into a large bowl and pour in the oil and melted vegan butter.
Add the Za'atar seasoning and toss until everything is well distributed.
Place the veggies onto a large sheet pan in an even layer (You don't want to over crowd your pan. It can result in steam and soggy veggies so use two pans if necessary).
Cook on the middle oven rack and roast for 20 minutes turning the veggies after 10 minutes.
Remove from the oven and and salt to taste.
