There is absolutely nothing better than fresh homemade Peach Cobbler. However, there is a very common misconception that you need eggs, butter and milk in order to make a delicious peach cobbler. This vegan recipe is the same one that I used back when I had a restaurant and no one ever suspected that it was dairy and egg free. In fact it was one of my most requested items. The crust is absolutely amazing and the peaches are perfectly sweet.
Cook Time 90 Minutes
Ingredients
The Filling
6-7 Fresh Peaches peeled and sliced
3/4 Cup of White Sugar
2 Tbs of Light Brown Sugar
1/2 Tsp of Cinnamon
The Crust
1/4 Cup of White Sugar
1/2 Cup of Light Brown Sugar
3 Tbs of oil of your choice
1/2 Tsp of Vanilla
1 Cup of self-Rising Flour (sifted)
Pinch of salt
1/2 Cup of Almond Milk or Water
(Mix together 2 additional Tbs of sugar and 1 Tsp of Cinnamon to sprinkle on top of the crust prior to cooking)
Preparation
Preheat oven to 350*
In a large bowl mix together peaches, white sugar, light brown sugar, and cinnamon. and pour into a deep baking dish. *Use the same bowl to mix together the crust to eliminate the use of any extra dishes to clean.
Mix together milk or water, vanilla, oil, white sugar and light brown sugar. Then add in flour and salt and mix well. (The dough will be thick.)
Next spoon the dough evenly over the peaches and sprinkle cinnamon and sugar mixture on top. Place dish on the middle rack of your oven and bake for 60-70 minutes. The top will be firm and golden brown and the sides will be bubbling with the yummy peach filling.
