If you're anything like me and have a serious sweet tooth that you are constantly trying to control, then you have to try this recipe. These raw oatmeal coconut almond butter cookies will certainly take the edge off without the usual guilt that comes with eating sweets.
All you need is:
1/4 Cup of Almond Butter
1/2 Cup of Cashews
3/4 Cup of Chopped Dates (You can add more or less depending on how sweet you want them
1/2 Cup of Oats
1 Tsp of Cinnamon
1/2 Tsp of Pumpkin Pie Spice
1/2 Cup of Coconut Flakes for topping
Preparation:
In a food processor combine Almond Butter, Cashews, Dates, Oats, Cinnamon and Pumpkin Pie Spice and process for about 1 minute or until all ingredients are completey broken down and combined. *Be sure to scrape down the sides of your processor after about 30 seconds then continue processing. *The mixture should be thick and slightly crumbly but should stay together if you form a ball. Next scoop heaping tablespoons of the mixture and form into the shape of a ball and gently press each ball into a cookie shape. Then press each cookie into the coconut flakes. That's it. The great thing about this recipe is that you can add whatever ingredients you like. Rasins, almonds, dry cherries or cranberries would taste absolutely amazing in these cookies.
This recipe will yeild about 8 cookies
