Leeks are one of my absolute favorite veggies. I get so excited when they start to come in season. This recipe was so easy to make and they taste absolutely amazing.
All you need is:
4 medium sized potatoes (I used russet potatoes)
1 Leek cleaned and chopped
3 garlic loves minced
*Optional 3-4 Tbs of vegan parmesan cheese (Check previous post for recipe)
2 Tbs of chopped spinach (for garnish)
4 Tbs of Extra Virgin Olive Oil (plus more for drizzling)
Salt & Pepper to taste
Preparation:
Preheat oven to 350.* Wrap each potato in foil and bake for about 30-35 minutes or until fork tender. Remove from oven and let them cool while you prepare your leeks.
Heat a medium sized skillet over medium heat and add in extra virgin olive oil, leeks and garlic. Cook for about 4-5 minutes until leeks are tender. Carefully cut each potato in half and use a spoon to gently remove the potato and place into the pan with the leeks and garlic. Mix the patatoes and leeks together and and add salt and pepper to taste. Next add the potato and leek mixture back into each potato and top with vegan parmesan cheese and spinach. Drizzle with additional extra virgin olive oil. Place the potatoes on a cookie sheet and place back into the oven and bake at 350* for 15-20 minutes until tops start to brown. That's it!
I always cut my leeks length wise and run them under cold water to clean them.
