My little sister is in town and although I do not eat tofu she does. She made this super quick and easy dish and she was nice enough to let me share it with you all. If you do not eat tofu you can always use Hemp tofu or another tofu substitute. The great thing is that you can make this any way that you like.
All you need is:
1 14 oz. pkg of tofu
1/2 a red pepper diced
1 large handful of kale
1 cup of sliced grape tomatoes
1/4 cup of onions chopped
3-4 mushrooms sliced
3 tbs of extra virgin olive oil
To season it you will need:
1 tbs of turmeric powder
1/2 tsp of onion powder
1/2 tsp of garlic powder
1/2 tsp of chili powder
pinch of paprika
salt and pepper to taste
Preparation:
First you will need to remove as much water from your tofu. To do this you will need to wrap your tofu in between 4-5 paper towels and place it in between to plates and place something heavy on top and leave it for 10 minutes. Once thats done just crumble the tofu using your hands. Next place a large skillet over medium heat and add in the extra virgin oilive oil and cook the veggies for 3-4 minutes. Then add in the tofu and seasonings and cook for an additional 3-4 minutes stirring constantly. Add salt and pepper to taste and thats it!!
