One of the best things about eating a plant based diet is that it allows you to induldge in things that would normally be considered a special treat all the time. One of my favorite things to make and eat is sorbet and since it is completely plant based I eat it at anytime of the day. In fact, in my home it is usually considered breakfast. for this particular recipe I used frozen cherries, banana's and blueberries and topped it with my sister fabulous homemade granola. I also wanted to add a little extra protein so I added in a scoop of LivWell Nutrition Raw Plant Protein in vanilla but this recipe is delicious with or without it. I made this particular sorbet in my Vitamix blender. However, I often use my inexpensive Ninja food processer and get great results too.
Makes: 2 servings
All you need is:
2 frozen bananas
1-1/2 cup of frozen blueberries
1-1/2 cup of frozen dark cherries
2-3 tbs of maple syrup or agave or which ever sweetner you prefer
1/4 a cup of liquid of your choice, almond milk, cashew milk, juice or water this is only necessary if your blender or food processor is having trouble moving the ingredients around
1 handful of granola for topping
Preparation:
Simply add all of the ingredients to your blender or food processor and pulse until smooth and creamy. If using a vitamix be sure to use the baton stick to help things move around. This will eliminate the need to add any extra liquids. Then top with your favorite granola.
