One of the best things I learned back when I was in the restaurant business was how to make super crispy and delicious sweet potato french fries. That's right, I said crispy, not soggy, not mushy, not soft....CRISPY and its much easier than you think, Not only are these french fries crispy, they are also seasoned with homemade cajun seasoning.
Cook Time: About 30 minutes
Make 2-3 servings
Ingredients
2 large sweet potatoes cut into shoe string size French fries
2 tbs of cornstarch
3 tbs of extra virgin olive oil or melted coconut oil
Cajun Seasoning Ingredients
2 teaspoons salt
2 teaspoons garlic powder
2 1/2 teaspoons paprika
1 teaspoon ground black pepper
1 teaspoon onion powder
1 teaspoon cayenne pepper
1 1/4 teaspoons dried oregano
1 1/4 teaspoons dried thyme
1/2 teaspoon red pepper flakes (optional)
Directions
Preheat oven to 375*
First make the cajun seasoning by combining all ingredients into a small bowl mix well and set aside.
Next add the uncooked sweet potatoes into a bowl and toss with the cornstarch making sure they are all coated and tap off any excess powder. Next place them onto a sheet pan lined with parchment paper in an even layer. Cook for about 10-15 minutes on each side until crispy.
Notes: When cooking your sweet potatoes they will soften after about 10 minutes of cooking. It is important to keep cooking them until the crisp up. Be sure to keep a close watch so that they do not burn. Once they are done, immediately season with the cajun seasoning.
