Sizzling oyster mushrooms with onions, peppers and garlic.
I remember in my "pre-vegan" days how excited I would get when I would order fajitas at a restaurant. The waitress would bring over a screaming hot sizzling cast iron platter full of food. I can still hear the waiter exclaiming "This is super hot! Be very careful." So imagine my excitement when I walked through TJ Maxx and found a cast iron platter. There was no question in my mind what I was going to use it for.....Fajitas. Now if you don't have a cast iron platter that's perfectly ok. You can always use a traditional cast iron skillet or regular pan to make these.
Cook Time: About 20 Minutes
Serves 2
Ingredients
1 large bell pepper sliced
1 large green bell pepper sliced
1 medium sized onion sliced
1 pound of oyster mushroom pulled apart (see photos below) You can also use whatever mushroom you like.
1 tsp of garlic (optional)
1 tsp of ground chipotle powder
1/2 tsp of cumin
1 tsp of chili powder
sea salt and pepper to taste
you choice of flour tortillas (optional)
4 tbs of oil for cooking (I used extra virgin olive oil)
Additional Toppings
Fresh avocado slices
Fresh pico de gallo
Instructions
Place a large skillet over medium high heat and add in the oil.
Next add in the onions, peppers, mushrooms and seasonings.
Cook while stirring occasionally for about 15 minutes. *Note I like to stir everything every few minutes so that everything has the chance to get nice and caramelized.
Add sea salt and pepper to taste.
Now you can wrap em' up in a tortilla with some fresh avocado!
