Apple crumb cake is one of my all time favorite desserts to make. I usually make it 4-5 times per year and it is always a treat for all of my friends and family. It's super easy to make and a great recipe for a beginning vegan baker. Its pretty much fool proof.
Ingredients
Apple Filling
6 cups of granny smith apples peeled and cut into 1/2 inch pieces
1/4 cup of brown sugar
1/2 tsp of cinnamon
Cake Batter Ingredients
3/4 cups of softened vegan butter
1-1/2 tsp of vanilla extract
3/4 cup of sugar
1-1/2 cup of room temperature non dairy milk (I use oat milk)
2-1/2 cup of sifted self rising flour
1/4 tsp of pumpkin pie spice
1/4 tsp of cinnamon
pinch of salt
Crumb topping
2 cups of all purpose flour (you can use self rising too)
1/2 tsp of cinnamon
1/4 cup of brown sugar
1/4 cup of white sugar
1/2 cup of cold vegan butter
Preparation
Preheat oven to 350*
In a large bowl whisk together the, sugar, cinnamon, pumpkin pie spice and vanilla until nice and creamy.
Add in the milk and stir
Now add in the flour little by little and salt.
Mix until combined and smooth. Do not over mix
Now grease and flour a 9x9 or 8x8 inch baking pan. and pour in the cake batter and set aside.
Using the same bowl add in the diced apples, sugar and cinnamon and mix well.
Pour the apples directly on to the cake batter.
Using the same bowl again, combine the ingredients and use your hands to combine the ingredients until it resembles crumbs.
Evenly distribute the crumbs on top of the cake.
