If you're looking for a quick comforting meal then this is the recipe for you. Let's face it, we all have days when we just don't feel like going all out for dinner. Thats why I love things that make cooking dinner easier like the using the frozen precooked Jasmine rice and Mushroom Medley from Trader Joe's. I was shocked when I tried the mushrooms because I thought there was no way I would like frozen precooked mushrooms but Trader Joe's has a magic touch because they were delicious.They're well seasoned with salt, garlic and extra virgin olive oil. Best of all they were just a few dollars.
Cook Time: 25 Minutes
Serves 2-3 people
Ingredients
1 red bell pepper chopped
1 green bell pepper chopped
1/2 red onion diced
2 garlic cloves
1 8oz package of mushrooms chopped
1 package of fresh spinach
4 cups of cooked rice (leftover rice is great too)
2 thyme sprigs with the leaves removed
1/2 tsp of fresh chopped sage
3-4 tbs of extra virgin olive oil
Salt and pepper to taste
Preparation
Place a large skillet over medium heat and carefully add in the extra virgin olive oil.
Add in the onions, diced peppers, garlic, thyme sprigs, sage and mushrooms.
Cook for 7-8 minutes.
Next add in the 4 cups of cooked rice and spinach.
Add salt and pepper to taste.
