I love biscuits. Growing up inn the south it was a must have addition to almost every meal. I remember back when I had a restaurant in West Georgia I had no choice but to learn how to make them after I had to abruptly let go the head cook. When the customers found out the cook was gone each and every person approached me with so much concern asking "What are you gonna do about the biscuits?" I had no clue what I was going to do but one of my regular customers named Mrs. Glenda, who just happened to be a biscuit making champion (yes thats a real thing) came into the restaurant after hours and taught me how to make biscuits from scratch. I will forever be grateful for her help. I still use some of the tips that she taught me. One of the things she taught me about was using "self-rising" flour. It really makes baking so easy because it already has baking powder/soda and in it so you don't have to worry about measuring and adding it into your recipe.
This is a recipe that I make often. It's super simple and easy because it doesn't require kneading or cutting. You simply mix all of the ingredients into a bowl and use a spoon to drop the dough onto a sheet pan.
Ingredients
3/4 cup of melted vegan butter
2 tbs of chopped chives
1 tsp of garlic powder
1/3 cup of plain non dairy milk
1 cup of vegan cheddar I use the whole foods brand
1 cup of self rising flour
1/4 tsp of salt
Preparation
Preheat oven to 400*
Add the melted butter, milk, chives, garlic powder and salt into a large bowl and mix well
Now add in the flour and cheese little by little and mix until everything is combined making sure not to over mix. Usually around 15-20 stirs will do.
Now use a table spoon and scoop heaping spoonfuls of the dough and drop them onto a sheet pan about 3 inches apart
Bake on the middle oven rack for about 8-10 minutes.
Then I like to brush the tops with melted butter and put the oven on broil for about 90 seconds.
Once the biscuits are done carefully use a spatula to remove them from the pan (leaving them on the pan will over cook them and make them hard.
Place them into a bowl or basket and immediately cover them with a clean kitchen towel. This will make sure they stay nice and soft.
