I've really been focusing on cleaning out my diet as much as possible which has led me to eliminate eating regular pasta. Thankfully there are so many great gluten free alternatives to eating regular pasta like, brown rice pasta and spelt pasta, which is what I used in this recipe. This recipe has been one of my go to pasta recipes for a while now. The perfectly cooked pasta paired with the the sweet sun dried tomatoes and the fresh dill is absolutely amazing.
Cook Time: 20 Minutes
Makes: 4 Servings
Ingredients
1 8oz. box of spelt fettuccine or any pasta that you prefer
1 cup of sliced sun dried tomatoes in oil (reserve the oil)
1-1/2 cups of your favorite tomato or marinara sauce
2 tbs of fresh dill chopped
3 tbs of extra virgin olive oil
3 minced garlic cloves
2 tsp of nutritional yeast (optional)
sea salt and pepper to taste
Preparation:
First prepare the pasta according to the package instructions and drain
Using the same pot add in about 3 tbs of extra virgin olive oil and the garlic and bring it to medium low heat.
Cook for about 3-5 minutes while stirring occasionally.
Next add the marinara sauce and sun dried tomatoes and cook on low heat for about 5 minutes.
Now add in the pasta, nutritional yeast and stir
Add in the fresh dill and salt and pepper to taste.
